The Wine Experience

The wines have been thoughtfully hand-selected and paired to complement each course.

The First Pour

Domaine William Fèvre Chablis 2022

A legendary Chablis estate acquired by the DBR Lafite family in 2024, Domaine William Fèvre is renowned for its Grand Cru wines. They also produce a brilliant village wine with an intense seashell-saltwater salinity derived from the vineyard’s Kimmeridgian soil. This wine, paired with tonight’s amuse-bouche and entrée, is the perfect complement to both the aromatic bouillabaisse and the decadent garlic, parsley, and melted butter of the Escargots de Bourgogne.

Key details: 100% Chardonnay; 12.5% ABV; 92 points from Wine Spectator, 93 from Decanter

The Second Pour

Domaine Diochon Moulin-à-Vent Vieilles Vignes 2023

Since 1935, Domaine Diochon has been making Beaujolais the old-fashioned way. The vines range in age from a youthful 40-years-old to over a century. Yields are understandably small. The Moulin-à-Vent is the most structured of the Beaujolais crus and is hearty enough to match the savory flavor of the Soupe à l’Oignon Gratinée. At the same time, the ripe red and dark fruit notes of the 2023 vintage pair well with the slight sweetness that graces the seasonal salad that follows.

Key details: 100% Gamay; 14% ABV; 91 points from The Wine Advocate

The Third Pour

Les Héritiers Saint-Genys Mercurey 1er Cru Monopole Clos Marcilly Cuvée Clovis 2022

This family estate in Mercurey produces single-vineyard Premier Cru Burgundy from Clos Marcilly, a walled vineyard in the Côte Chalonnaise. Only about 500 cases are produced annually, of which only about 100 cases are exported to the US. The 2022 vintage is particularly notable and is considered “a traditional, divine pairing for Bœuf Bourguignon.”

Key details: 100% Pinot Noir; 13% ABV; 97 points from James Suckling

The Sweet Finish

Busnel Calvados VSOP (Vieille Réserve)

The Maison Busnel distillery, created in 1820, is the oldest of the major Calvados producers. The VSOP is a russet-hued apple brandy from the Pays d’Auge AOC in Normandy, France. Aged a minimum of four years in French oak barrels and double-distilled in traditional copper pots, the rich aroma uniquely harmonizes with a Tarte Tatin.

Key details: Blended from over 20 varieties of cider apples; 40% ABV; 94 points from Wine Enthusiast

  • Price: $250 per guest
Includes the complete six-course menu and hand-selected wine pairings.

The November 11th Dinner, 6pm.
